Old Kentucky Chess Pie

If you are preparing for your Kentucky Derby menu and you’re not sure what to prepare for dessert, here is a dessert that is sure to please. The Old Kentucky Chess Pie is loaded with bourbon whiskey and the perfect addition to any buffet. The filling is perfect prepared in individual tartlets or made into a 9-inch pie. Simply use cookie cutter rounds to make 2-inch circles that you can fit into muffin cups; just remember to prick the dough so it does not rise.

Ingredients

  • 1 partially baked 9-inch pie shell
  • 8 tablespoons butter (1 stick)
  • 4 egg yolks 1 cup sugar
  • 1 tablespoon cornmeal
  • 1 tablespoon flour
  • 1/4 cup bourbon whiskey (use the good stuff)
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 350 degrees
  2. Melt butter and allow to cool to room temperature
  3. Beat the yolks and sugar until light in color
  4. Beat in the cornmeal and flour
  5. Continue to beat at low speed while adding the butter, bourbon, cream and vanilla
  6. Pour filling into the pie shell
  7. Bake until a knife inserted in the center of the pie comes out clean, about 30 minutes
  8. Allow pie to cool
  9. Serve at room temperature
